
Ingredients
Lemon Cranberry Scone
- 1/4 cup THM baking blend
- 1/2 tsp baking powder
- 1 pinch mineral salt
- 1 tbsp Gentle Sweet
- 1 tsp coconut oil or butter add 1 extra pinch of salt if using coconut oil
- 2 tbsp egg white
- 1 tbsp lemon juice
- 1/4 cup fresh or frozen cranberries
Icing
- 1 tsp lemon juice
- 1 tsp almond milk
- 3 tbsp Gentle Sweet (I use xylitol free)
Instructions
Lemon Cranberry Scone
- Mix together all ingredients except cranberries
- Add cranberries
- Shape into scone
- Cook in microwave for 2 mins (Optional: Bake in oven at 400 for 15-18 mins)
- Drizzle with icing
Icing
- Mix and drizzle onto cooked scone
- Enjoy!
Notes
If you like super lemon 🍋 flavor you can use 2 tsp of lemon juice only.
