Lemon cranberry scone

Ingredients

Lemon Cranberry Scone

  • 1/4 cup THM baking blend
  • 1/2 tsp baking powder
  • 1 pinch mineral salt
  • 1 tbsp Gentle Sweet
  • 1 tsp coconut oil or butter add 1 extra pinch of salt if using coconut oil
  • 2 tbsp egg white
  • 1 tbsp lemon juice
  • 1/4 cup fresh or frozen cranberries

Icing

  • 1 tsp lemon juice
  • 1 tsp almond milk
  • 3 tbsp Gentle Sweet (I use xylitol free)

Instructions

Lemon Cranberry Scone

  • Mix together all ingredients except cranberries
  • Add cranberries
  • Shape into scone
  • Cook in microwave for 2 mins (Optional: Bake in oven at 400 for 15-18 mins)
  • Drizzle with icing

Icing

  • Mix and drizzle onto cooked scone
  • Enjoy!

Notes

 
If you like super lemon 🍋 flavor you can use 2 tsp of lemon juice only.
