Ingredients

Raspberry Filling

Alternative filling*

  • 2 tbsp. Kite Hill Dairy Free Cream Cheese for DF or Light Laughing Cow Cheese
  • 2 tsp. Gentle Sweet
  • 3 tbsp. thawed or fresh Raspberries

Cake

  • 2 tbsp. Baking Blend
  • 1 tbsp. Cocoa Powder**
  • 1 pinch salt
  • 2 pinches baking soda
  • 1/4 tsp. baking powder
  • 2 tbsp. Gentle Sweet
  • 1 egg
  • 1 tbsp. Coconut Oil or Butter
  • 1 splash vanilla extract
  • 1 tbsp. water
  • 1 tbsp. sugar free chocolate chips***

Instructions

Prepare the filling:

  • Make filling using 2 tbsp. of water. Split the water between two mini glass bowls.
  • Add gelatin to 1 tbsp. of the cold water to bloom the gelatin.
  • Heat the other tbsp. of water to hot. Microwave it for 30 seconds. Add to gelatin mix. Stir completely until dissolved.
  • Add remaining ingredients plus gelatin mix to mini food processor.
  • Blend for 30 seconds, check and remix if any parts did not get blended.
  • Set mixture in fridge while preparing cake.

Alternative Filling prep:

  • Add LLCC or Kite Hill Cream Cheese to bowl.
  • Add in Gentle sweet and thawed or freshed raspberries.
  • Mush together with a fork.
  • Set aside in fridge while preparing cake.

Prepare the cake:

  • Add all ingredients to a bowl or mug.
  • Place in mini silicone loaf pan, mug or ramekin.
  • Microwave for 1 minute 30 seconds.
  • Let cool, remove from mini silicone loaf pan, mug or ramekin.
  • Cut in half, let cool off for another minute.
  • Get out filling mix from refrigerator and spread on bottom half of the cake.
  • Place top half on cake.
  • Dust top with gentle sweet.
  • Enjoy right away, or refrigerator for 30 minutes to 1 hour to firm up the filling.

*Alternative filling - if you really aren't one for gelatin, although I think you should try it first, you can make an alternative filling.
