  • 1 cup green or brown lentils rinsed and drained
  • 2 medium sweet potatoes peeled and diced
  • 1 onion chopped*
  • 1 red bell pepper diced*
  • 1 green bell pepper diced*
  • 3 cloves garlic minced or ground garlic 1/2 - 1 tsp.
  • 2 carrots diced
  • 1 14 oz can diced tomatoes
  • 4 cups bone broth
  • 1 teaspoon olive oil optional
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish optional

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes. (If using frozen onion and pepper blend you don't really need to add any oil to the pan.)
  • Add minced garlic to the pot and cook for another 1-2 minutes until fragrant. (If using powdered garlic, you can skip this step and add it with the rest of the seasonings.)
  • Stir in diced carrots, red bell pepper, and green bell pepper. Cook for 5-7 minutes until the vegetables are slightly softened.
  • Add the rinsed lentils, diced sweet potatoes, diced tomatoes, bone broth, bay leaf, smoked paprika, and ground cumin to the pot. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for about 25-30 minutes or until the lentils and sweet potatoes are tender. Stir occasionally.
  • Once the lentils and sweet potatoes are cooked, season the feijoada with salt and pepper to taste. Remove the bay leaf.
  • Serve the Brazilian Lentil and Sweet Potato Feijoada hot, garnished with chopped fresh cilantro.

*You can sub frozen peppers and onions for fresh to save time.
