Easy Cheesy Chicken Casserole Bake

  • 2-3 cups cooked rice or on-plan pasta brown rice, quinoa, whole wheat pasta, etc.
  • 2-3 cups Leftover cooked chicken chopped into bite-sized pieces
  • 2 cups your favorite cheese shredded (mild cheddar, mozzarella, etc.)
  • 2 tablespoons heavy whipping cream
  • Salt and pepper to taste
  • Optional: Leftover cooked bacon chopped


  • Preheat your oven to 375°F (190°C).
  • In a 9 by 13 glass baking dish, combine the cooked rice or pasta, leftover chicken pieces, shredded cheese, and optional chopped leftover bacon.
  • Drizzle the heavy whipping cream over the mixture.
  • Season with salt and pepper to taste.
  • Stir everything together until well combined.
  • Spread the mixture evenly in the baking dish.
  • Bake in the preheated oven for about 10 minutes, or until the cheese is completely melted and bubbly.
  • Once done, remove from the oven and let it cool slightly before serving.
