Easy Cheesy Chicken Casserole Bake

All in one dish kids love!

  • 2-3 cups cooked rice or on-plan pasta (brown rice, quinoa, whole wheat pasta, etc.)
  • 2-3 cups Leftover cooked chicken (chopped into bite-sized pieces)
  • 2 cups your favorite cheese (shredded (mild cheddar, mozzarella, etc.))
  • 2 tablespoons heavy whipping cream
  • Salt and pepper to taste
  • Optional: Leftover cooked bacon (chopped)
  1. Preheat your oven to 375°F (190°C).
  2. In a 9 by 13 glass baking dish, combine the cooked rice or pasta, leftover chicken pieces, shredded cheese, and optional chopped leftover bacon.
  3. Drizzle the heavy whipping cream over the mixture.
  4. Season with salt and pepper to taste.
  5. Stir everything together until well combined.
  6. Spread the mixture evenly in the baking dish.
  7. Bake in the preheated oven for about 10 minutes, or until the cheese is completely melted and bubbly.
  8. Once done, remove from the oven and let it cool slightly before serving.
