Helpin’ Hubby’s Faux Breaded Pork Tenderloin

  • Sheet pan liner(helpful to reduce mess)
  • Full sheet pan liner
  • Or 1/4 sheet pan liner
  • 2 lbs pork loin

Faux breading

  • 1/2 cup Parmesan
  • 1/4 cup nutritional yeast
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1 Pinch cayenne
  • 1 egg
  • 1/2 cup butter (1 stick) (Any on plan frying oil will work, coconut oil, ghee, or red palm oil)
  1. Measure and put the crust ingredients into a ziploc bag. (Parmesan, nutritional yeast, and seasonings).

  2. Rotate the bag so the materials blend. Note you may need to break up some Parmesan clumps in the process to get a good blend.
  3. Pour the crust blend onto a dinner plate or small cookie sheet to make a thin layer.
  4. Cut the pork loin into 3/4-1 inch thick chops. Note, I like to cut off the thick excess fat pieces, but thin white fat is not a bad thing, it makes the meat juicy.
  5. Put the pork chops into a 1 gallon ziploc bag, do not zip it.
  6. Using a meat mallet, flatten the chops until the pieces are about 1/4-1/3 inch thick.
  7. After flattening, using a meat tenderizer, gentle tenderize 1 side of the flattened pork.
  8. Scramble the egg and place into a cup or small bowl.
  9. Put the flattened tenderloin into the egg wash to coat both sides.
  10. Move the tenderloin directly onto the plate of crust and coat both sides. I usually flip it four or five times to get a really good coat.
  11. Move the breaded tenderloin into a clean cookie sheet or plate to await pan frying. Epicure Silicone liners work great for this.
  12. Repeat until all tenderloins are breaded.
  13. Preheat 1/2 cup butter or oil of choice on medium-high heat (until oil bubbles when you flick water on it.)

  14. Fill the pan with tenderloins and cook the first side for about 4-5 minutes. Note: be sure to watch the bubbles in the pan. They should appear as “controlled bubbling” not super chaotic where you are fearful of getting burned as it looks like it’s throwing droplets all over or covering the top of the tenderloin.

  15. Flip and cook the second side when the cooked side is golden brown for another 4-5 minutes.
  16. When the color looks golden brown, move the cooked breaded tenderloins to a clean plate or cookie sheet and let rest for 5 minutes before serving.
  17. Enjoy with your favorite sides.
