Ingredients

Base Almond Milk Protein Mix (used for all layers)

  • 1 ½ cups almond milk
  • 30 grams protein powder in the video demo: ¼ cup + 2 tablespoons whey protein powder

Blue Layer

  • ½ cup almond milk protein mix
  • 1 cup blueberries blueberries give a distinguished, delicious taste but create a more purple color; subbing in ½-1 teaspoon blue spirulina will create a true blue color
  • ½ cup Greek yogurt unsweetened
  • 5-8 ice cubes
  • 1-1 ½ teaspoons super sweet adjust to taste

White Layer

Red Layer

  • ½ cup almond milk protein mix
  • 1 cup fresh or frozen strawberries
  • ½ cup pitted fresh or frozen cherries
  • ½ cup Greek yogurt unsweetened
  • 1-2 teaspoons super sweet adjust to taste
  • 5-8 ice cubes

Instructions

Prepare the Base:

  • - Mix 1 ½ cups almond milk with 30 grams protein powder to create the almond milk protein mix.

Blue Layer:

  • - Combine ½ cup almond milk protein mix, 1 cup blueberries (blueberries give a distinguished, delicious taste but create a more purple color; subbing in ½-1 teaspoon blue spirulina will create a true blue color), ½ cup Greek yogurt, 5-8 ice cubes, and 1-1 ½ teaspoons super sweet in a blender. Blend until smooth.
  • - Pour the blue mixture into popsicle molds, insert popsicle sticks, and freeze for 20 minutes.

White Layer:

  • - Combine ½ cup almond milk protein mix, 1 cup Greek yogurt, 5-8 ice cubes, 1 ½ teaspoons super sweet, and ½ teaspoon pineapple extract (optional) in a blender. Blend until smooth.
  • - After the blue layer has frozen for 20 minutes, pour the white mixture over it and freeze for another 20 minutes.

Red Layer:

  • - Combine ½ cup almond milk protein mix, 1 cup strawberries, ½ cup cherries, ½ cup Greek yogurt, 1-2 teaspoons super sweet, and 5-8 ice cubes in a blender. Blend until smooth.
  • - After the white layer has frozen for 20 minutes, pour the red mixture over it and freeze for at least 1 hour.

Serve:

  • - Once fully frozen, remove the popsicles from the molds and enjoy!

Notes

Serves approximately 15 to 20. The serving size is dependent on the popsicle molds used. The recipe has 84 g of protein in the entire batch.
