Optional Chocolate Coating:

  • 1/2 cup Sugar-Free On-Plan Chocolate Chips
  • 1 tablespoon Coconut Oil

  • In a mixing bowl, combine peanut flour, plant protein, baking blend, Gentle Sweet, salt, almond milk, and melted peanut butter (*if using). Mix until well combined; the mixture should be crumbly and cookie dough dense.
  • For a lower-fat option, you may substitute in two extra tablespoons of peanut powder and one additional teaspoon of almond milk, leaving out the peanut butter. If the dough is sticky, place it in the freezer for about five minutes to firm up.
  • Shape the dough on parchment paper, roll it out between two pieces of parchment paper, and then cut into five equal-sized bars.
  • Optional: Melt the chocolate and coconut oil together in a chocolate melter or microwave. Stir until smooth. Dip each bar into the melted chocolate mixture, ensuring they are evenly coated. Place them on parchment paper or a silicone baking sheet liner.Transfer the bars to the freezer for about five minutes to firm up.
  • Enjoy your protein bars!
