Basil Chicken Ingredients

  • 2 to 2.5 pounds chicken breast
  • 1 tsp. Olive oil
  • 4 cloves garlic minced
  • 6 serrano chili peppers
  • 6 tablespoons fish sauce
  • 2 cups bone broth
  • 1 teaspoon super sweet
  • 2 tablespoons tamari or soy sauce
  • 3 to 5 ounces basil leaves
  • Brown rice see recipe below

Brown Rice Ingredients

  • 3 cups brown rice
  • 4 cups bone broth


Brown Rice Directions

  • Combine 3 cups of brown rice and 4 cups of bone broth in an Instant Pot.
  • Cook on manual for 30 minutes.
  • Fluff the rice and serve.
  • Any extra rice can be saved for other meals throughout the week.

Basil Chicken Directions

  • Use scissors to cut the chicken breast into small pieces.
  • Wearing gloves, cut the serrano peppers and deseed them if you prefer a milder dish. To do this, scoop out the seeds with your gloved nails. For a spicier dish, leave the seeds in.
  • Place the serranos in a mini food processor and dice them finely.
  • Mince the garlic cloves using a garlic press.
  • Heat 1 teaspoon of olive oil in a wok over medium heat.
  • Add the minced garlic and diced serranos to the wok. Cook for a couple of minutes until fragrant.
  • Add the chicken pieces to the wok and cook until the chicken is white on all sides.
  • Add the fish sauce, bone broth, super sweet, and tamari or soy sauce to the wok.
  • Cook for about 8 more minutes, stirring occasionally, Add the basil leaves and cook until they wilt down.
  • Serve the basil chicken over the cooked brown rice for a trim healthy E dish. For a fuel pull dish, serve over cauliflower rice.
