Tuna Fritters

  • 2- 5 oz can tuna
  • 2 eggs
  • 1/2 onion (optional)
  • 1 tbsp relish (optional)
  • 1 tbsp parsley (I used the canned kind)
  • 1/2 tsp mineral salt
  • 1/4 tsp pepper (optional)
  • 1 tbsp lemon juice
  • 2 heaping tbsp Big burger sauce (this makes it epic!)
  1. Mix all ingredients in large bowl.
  2. Use a big spoon to drop 4 large fritters into a lightly sprayed skillet. You can use avocado or coconut oil spray.
  3. Cook until golden brown on each side.
  4. Add your favorite veggies.
  5. Top with a dollop of big burger sauce and enjoy!

Tip: Make sure the first side is golden brown before flipping, this will help keep your fritter together.

*If your batter ends up too moist, you can always add in 2 tbsp of baking blend, this recipe is very moist, the egg will help bind it together.
