  • 4 - 5 medium zucchinis halved lengthwise
  • 1 15 oz. can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 doonk Trim Healthy Stevia optional for a sweeter sauce
  • 1 - 1.5 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese optional
  • 1/2 cup sliced pepperoni and cooked sausage optional
  • Any of your favorite pizza toppings optional
  • Fresh basil leaves for garnish optional


  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or use the epicure silicone sheet pan liner.
  • Using a spoon, scoop out the seeds and flesh from the center of each zucchini half, leaving about 1/4 inch of flesh around the edges to form a "boat".
  • Place the hollowed-out zucchini boats on the prepared baking sheet.
  • In a small bowl, mix together the tomato sauce, dried oregano, garlic powder, salt, pepper and stevia if using.
  • Spoon the marinara sauce mixture evenly into each zucchini boat.
  • Sprinkle shredded mozzarella cheese over the top of each zucchini boat.
  • If using, distribute the sliced pepperoni and cooked sausage evenly over the cheese. You can also add any of your other favorite toppings like mushrooms, peppers, etc.
  • Optional: Sprinkle grated Parmesan cheese over the top of each boat.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the zucchini is tender. Broil the last 2 minutes to give it the crispy brown look.
  • Remove from the oven and let cool for a few minutes before serving.
  • Garnish with fresh basil leaves before serving, if desired.
